- 1 lb (453g) lean ground turkey
- 2 tablespoons olive oil
- 1 medium onion, finely diced (about 1 cup)
- 3 garlic cloves, minced
- 2 tablespoons homemade taco seasoning (or 1 packet store-bought)
- 1/4 cup low-sodium chicken broth
- 1 tablespoon tomato paste
- 2 cups cooked brown rice or cauliflower rice
- 1 can (15 oz/425g) black beans, rinsed and drained
- 2 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 large avocado, sliced
- 1/2 cup red onion, thinly sliced
- 1/2 cup fresh cilantro, chopped
- 1 lime, cut into wedges
- 1/2 cup plain Greek yogurt (optional)
- 1/4 cup shredded reduced-fat cheese (optional)
- 1/4 cup salsa or pico de gallo (optional)
- Jalapeños to taste (optional)
Instructions
- If making homemade taco seasoning, combine 1 tablespoon chili powder, 1 teaspoon ground cumin, 1 teaspoon garlic powder, 1 teaspoon paprika, 1/2 teaspoon oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper in a small bowl.
- Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 3-4 minutes until translucent.
- Add minced garlic and cook for another 30 seconds until fragrant.
- Increase heat to medium-high and add ground turkey, breaking it apart with a wooden spoon as it cooks. Brown for 5-6 minutes until almost cooked through.
- Sprinkle taco seasoning over the turkey mixture and stir to coat evenly. Add chicken broth and tomato paste, stirring to combine.
- Reduce heat to medium-low and simmer for 5 minutes until the liquid has reduced and the turkey is well-seasoned.
- Start assembling bowls with a base of brown rice or cauliflower rice (about 1/2 cup per bowl).
- Add a portion of the seasoned turkey (approximately 3/4 cup per bowl).
- Arrange black beans, lettuce, tomatoes, avocado slices, and red onion around the bowl.
- Sprinkle with fresh cilantro and add a lime wedge to the side.
- Top with optional Greek yogurt, shredded cheese, salsa, and jalapeños if desired.
