- 2 large English cucumbers (about 1½ pounds)
- ½ cup creamy natural peanut butter
- 3 tablespoons low-sodium soy sauce or tamari
- 2 tablespoons rice vinegar
- 1 tablespoon toasted sesame oil
- 1 tablespoon maple syrup or honey
- 2 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 1–2 tablespoons sriracha or chili garlic sauce
- 2–3 tablespoons warm water
- ¼ cup chopped roasted peanuts, for garnish
- 2 tablespoons chopped fresh cilantro, for garnish
- 1 tablespoon toasted sesame seeds, for garnish
- 1 teaspoon salt (for draining cucumbers)
Instructions
- Wash and slice cucumbers into thin rounds (about ⅛-inch thick). Place in a colander, sprinkle with salt, toss gently, and let sit for 15-20 minutes.
- Meanwhile, in a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, maple syrup, garlic, ginger, and sriracha until smooth.
- Add warm water gradually, one tablespoon at a time, until the sauce reaches a pourable but thick consistency.
- Pat the cucumber slices dry with paper towels and transfer to a large mixing bowl.
- Pour about three-quarters of the peanut sauce over the cucumbers and gently toss until evenly coated.
- Let the cucumbers marinate in the sauce for 10 minutes to absorb the flavors.
- Transfer to a serving plate, drizzle with remaining sauce, and garnish with chopped peanuts, cilantro, and sesame seeds.
- Serve immediately for the best texture and flavor.
