Ingredients

  • 2 large English cucumbers (about pounds)
  • ½ cup creamy natural peanut butter
  • 3 tablespoons low-sodium soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon maple syrup or honey
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 12 tablespoons sriracha or chili garlic sauce
  • 23 tablespoons warm water
  • ¼ cup chopped roasted peanuts, for garnish
  • 2 tablespoons chopped fresh cilantro, for garnish
  • 1 tablespoon toasted sesame seeds, for garnish
  • 1 teaspoon salt (for draining cucumbers)

Instructions

  1. Wash and slice cucumbers into thin rounds (about ⅛-inch thick). Place in a colander, sprinkle with salt, toss gently, and let sit for 15-20 minutes.
  2. Meanwhile, in a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, maple syrup, garlic, ginger, and sriracha until smooth.
  3. Add warm water gradually, one tablespoon at a time, until the sauce reaches a pourable but thick consistency.
  4. Pat the cucumber slices dry with paper towels and transfer to a large mixing bowl.
  5. Pour about three-quarters of the peanut sauce over the cucumbers and gently toss until evenly coated.
  6. Let the cucumbers marinate in the sauce for 10 minutes to absorb the flavors.
  7. Transfer to a serving plate, drizzle with remaining sauce, and garnish with chopped peanuts, cilantro, and sesame seeds.
  8. Serve immediately for the best texture and flavor.
