- 1 teaspoon baking powder
- ½ teaspoon salt
- ⅓ cup (67g) granulated sugar for caramelizing
- 2 tablespoons (25g) turbinado sugar (optional, for extra crunch)
Instructions
- Step 1: Prepare the Cookie Dough In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and vanilla bean seeds. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry mixture to wet ingredients, mixing just until incorporated.
- Step 2: Chill the Dough Cover the dough with plastic wrap and refrigerate for at least 1 hour. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Step 3: Shape and Bake the Cookies Scoop chilled dough into balls, flatten slightly, and place on prepared baking sheets. Bake for 10-12 minutes until edges are set but centers are still soft.
- Step 4: Create the Caramelized Top Sprinkle sugar over warm cookies and use a torch or broiler to caramelize the sugar. Let cookies cool completely to harden the sugar crust.
