- 12 oz (340g) high-quality white chocolate, finely chopped
- ¼ cup (60ml) heavy cream
- 3 tablespoons (45ml) fresh key lime juice (regular limes can substitute if necessary)
- 2 teaspoons (4g) fresh key lime zest, finely grated
- 1 tablespoon (14g) unsalted butter, softened
- ¼ teaspoon pure vanilla extract
- Pinch of salt
- 8 oz (225g) white chocolate for coating
- 1 tablespoon (15ml) coconut oil
- Green food coloring (optional)
- Graham cracker crumbs or additional lime zest for garnish
Instructions
- Step 1: Prepare the Ganache Begin by placing your finely chopped white chocolate in a medium heat-resistant bowl. Heat the heavy cream in a small saucepan over medium-low heat just until it begins to steam – don’t let it boil. Remove from heat and pour directly over the white chocolate. Allow it to sit undisturbed for 2 minutes, letting the chocolate begin to melt.
- Step 2: Create the Key Lime Filling Gently stir the chocolate and cream mixture with a silicone spatula until completely smooth. Add the key lime juice, zest, softened butter, vanilla extract, and salt. Stir until fully incorporated. If you’d like a more pronounced green color, add a tiny drop of green food coloring. The mixture will be relatively thin at this point – that’s perfectly normal.
- Step 3: Chill the Mixture Cover the bowl with plastic wrap, pressing it directly onto the surface of the ganache to prevent a skin from forming. Refrigerate for at least 2 hours or until firm enough to scoop and roll. For best results, leave it overnight.
- Step 4: Shape the Truffles Once firm, use a melon baller or small cookie scoop to portion the ganache. Working quickly, roll each portion between your palms to create smooth balls. If the mixture becomes too soft, return it to the refrigerator for 15 minutes before continuing. Place the rolled truffles on a parchment-lined baking sheet and chill for 20 minutes.
- Step 5: Coat the Truffles Melt the remaining white chocolate with coconut oil using either a double boiler or in 15-second bursts in the microwave, stirring between each interval. Allow the coating to cool slightly before dipping. Using a fork or specialized dipping tool, dip each chilled truffle into the melted chocolate, tapping gently to remove excess. Before the coating sets, sprinkle with graham cracker crumbs or additional lime zest for garnish and that visual pop of green.
- Step 6: Set and Store Place the dipped Zesty Key Lime Truffles back on the parchment paper and allow them to set completely at room temperature (about 1 hour) or in the refrigerator for 15 minutes. Once set, transfer to an airtight container for storage.
