Ingredients
Scale
- 2¼ cups (280g) all-purpose flour
- 1 tsp instant yeast
- 1 tsp sugar
- 1 tsp salt
- ¾ cup (180ml) warm water (about 110°F/43°C)
- 2 tbsp (30ml) olive oil
- 1 cup (240g) Greek yogurt (full-fat)
- 1 medium cucumber, seeded and grated (about 1 cup)
- 2 cloves garlic, minced
- 1 tbsp fresh lemon juice
- 2 tbsp fresh dill, chopped
- 1 tbsp olive oil
- ½ tsp salt
- 2 boneless, skinless chicken breasts (about 1 lb/450g)
- 2 tbsp olive oil
- 2 tbsp Greek seasoning (or 1 tsp each dried oregano, garlic powder, and dried mint)
- ½ red onion, thinly sliced
- ½ cup cherry tomatoes, halved
- ¼ cup kalamata olives, pitted and sliced
- ½ cup crumbled feta cheese
- Fresh dill and mint for garnish
Instructions
- In a large bowl, combine flour, yeast, sugar, and salt. Add warm water and olive oil, mix until a shaggy dough forms. Knead for 5-7 minutes until smooth and elastic. Place in oiled bowl, cover, and let rise 1-2 hours until doubled.
- Make tzatziki by grating cucumber and squeezing out excess moisture in a towel. Mix with Greek yogurt, garlic, lemon juice, dill, olive oil, and salt. Refrigerate for at least 30 minutes.
- Cut chicken into strips and marinate with olive oil, Greek seasoning, salt, and lemon juice for 30+ minutes. Cook in a skillet over medium-high heat for 4-5 minutes until just cooked. Slice into bite-sized pieces.
- Preheat oven to 475°F (245°C) with pizza stone or baking sheet inside. Stretch dough into a 12-14 inch circle on parchment paper. Brush with olive oil and pre-bake for 5 minutes.
- Top pre-baked crust with chicken, red onion, tomatoes, and olives. Bake 8-10 minutes until crust is golden brown.
- Remove from oven, sprinkle with feta cheese, and let cool 2-3 minutes. Spread tzatziki sauce over top and garnish with fresh herbs. Slice and serve immediately.
