  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups toffee bits
  • 1/4 cup granulated sugar (for rolling)
  • 1 tablespoon ground cinnamon (for rolling)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
  2. Mix the dough: In a large mixing bowl, cream the softened butter with the granulated sugar and brown sugar until light and fluffy. This should take about 3 minutes with an electric mixer. Add the egg and vanilla extract, and beat until smooth.
  3. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  4. Add toffee bits: Stir in the toffee bits until they are evenly distributed throughout the dough.
  5. Shape the cookies: Use a cookie scoop to form dough balls, about 1 inch each. In a small bowl, combine the cinnamon and granulated sugar. Roll each dough ball in the cinnamon sugar mixture until it’s fully coated.
  6. Bake: Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart. Bake for 8-10 minutes, or until the edges of the cookies are golden brown and the centers are soft.
  7. Cool and enjoy: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
