- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 1/2 cups toffee bits
- 1/4 cup granulated sugar (for rolling)
- 1 tablespoon ground cinnamon (for rolling)
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
- Mix the dough: In a large mixing bowl, cream the softened butter with the granulated sugar and brown sugar until light and fluffy. This should take about 3 minutes with an electric mixer. Add the egg and vanilla extract, and beat until smooth.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Add toffee bits: Stir in the toffee bits until they are evenly distributed throughout the dough.
- Shape the cookies: Use a cookie scoop to form dough balls, about 1 inch each. In a small bowl, combine the cinnamon and granulated sugar. Roll each dough ball in the cinnamon sugar mixture until it’s fully coated.
- Bake: Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart. Bake for 8-10 minutes, or until the edges of the cookies are golden brown and the centers are soft.
- Cool and enjoy: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
