  • pounds (680g) large shrimp (1620 count), peeled and deveined with tails on
  • 3 tablespoons (45ml) olive oil
  • 2 tablespoons (30ml) fresh lemon juice
  • 4 cloves garlic, minced (about 2 tablespoons)
  • 1 teaspoon (5g) paprika
  • 1 teaspoon (5g) dried oregano
  • 1 teaspoon (5g) brown sugar
  • ½ teaspoon (2.5g) cayenne pepper (adjust to taste)
  • ½ teaspoon (2.5g) ground black pepper
  • ½ teaspoon (3g) salt
  • ¼ teaspoon (1g) ground cumin
  • 2 tablespoons (30g) unsalted butter, melted
  • 2 tablespoons (8g) fresh parsley, chopped for garnish
  • Lemon wedges for serving

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, minced garlic, paprika, oregano, brown sugar, cayenne, black pepper, salt, and cumin.
  2. Add shrimp to the marinade and toss to coat evenly. Cover and refrigerate for exactly 30 minutes.
  3. Preheat grill or grill pan to high heat (approximately 450°F/232°C).
  4. Remove shrimp from marinade and place on hot grill. Cook for 2-3 minutes per side until pink, opaque, and showing grill marks.
  5. Transfer grilled shrimp to a serving platter, drizzle with melted butter, and garnish with fresh parsley.
  6. Serve immediately with lemon wedges on the side.
