Teriyaki Sesame Beef Skewers

  • lbs (680g) beef sirloin or ribeye, cut into 1-inch cubes
  • ½ cup (120ml) low-sodium soy sauce
  • ¼ cup (60ml) mirin
  • 3 tablespoons (45g) brown sugar, packed
  • 2 tablespoons (30ml) honey
  • 2 tablespoons (30ml) rice vinegar
  • 2 tablespoons (30ml) sesame oil
  • 3 cloves garlic, minced (about 1 tablespoon)
  • 1 tablespoon (15g) fresh ginger, grated
  • 2 tablespoons (18g) sesame seeds, plus extra for garnish
  • 3 green onions, thinly sliced (white and green parts separated)
  • 1216 wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Instructions

  1. Combine soy sauce, mirin, brown sugar, honey, rice vinegar, sesame oil, garlic, and ginger in a bowl. Whisk until sugar dissolves. Reserve ¼ cup for basting. Add 1 tablespoon sesame seeds and white parts of green onions to the main marinade.
  2. Place beef cubes in a zip-top bag or shallow dish and pour marinade over them. Ensure all pieces are coated. Refrigerate for at least 1 hour, preferably 4-8 hours.
  3. If using wooden skewers, soak in water for 30 minutes. Remove beef from refrigerator 20 minutes before cooking. Thread 4-5 beef pieces onto each skewer, leaving small gaps between pieces.
  4. Toast remaining sesame seeds in a dry skillet over medium heat until golden brown, about 2-3 minutes. Set aside.
  5. Preheat grill or grill pan to medium-high heat (400-450°F). Oil the grates. Grill skewers for 3-4 minutes per side until beef reaches desired doneness. In the last minute, brush with reserved marinade.
  6. Transfer skewers to a serving platter and let rest 2-3 minutes. Sprinkle with toasted sesame seeds and green onion parts. Serve immediately.
