- 1½ lbs (680g) beef sirloin or ribeye, cut into 1-inch cubes
- ½ cup (120ml) low-sodium soy sauce
- ¼ cup (60ml) mirin
- 3 tablespoons (45g) brown sugar, packed
- 2 tablespoons (30ml) honey
- 2 tablespoons (30ml) rice vinegar
- 2 tablespoons (30ml) sesame oil
- 3 cloves garlic, minced (about 1 tablespoon)
- 1 tablespoon (15g) fresh ginger, grated
- 2 tablespoons (18g) sesame seeds, plus extra for garnish
- 3 green onions, thinly sliced (white and green parts separated)
- 12–16 wooden or metal skewers (if using wooden, soak in water for 30 minutes)
Instructions
- Combine soy sauce, mirin, brown sugar, honey, rice vinegar, sesame oil, garlic, and ginger in a bowl. Whisk until sugar dissolves. Reserve ¼ cup for basting. Add 1 tablespoon sesame seeds and white parts of green onions to the main marinade.
- Place beef cubes in a zip-top bag or shallow dish and pour marinade over them. Ensure all pieces are coated. Refrigerate for at least 1 hour, preferably 4-8 hours.
- If using wooden skewers, soak in water for 30 minutes. Remove beef from refrigerator 20 minutes before cooking. Thread 4-5 beef pieces onto each skewer, leaving small gaps between pieces.
- Toast remaining sesame seeds in a dry skillet over medium heat until golden brown, about 2-3 minutes. Set aside.
- Preheat grill or grill pan to medium-high heat (400-450°F). Oil the grates. Grill skewers for 3-4 minutes per side until beef reaches desired doneness. In the last minute, brush with reserved marinade.
- Transfer skewers to a serving platter and let rest 2-3 minutes. Sprinkle with toasted sesame seeds and green onion parts. Serve immediately.
