- 1 tablespoon (15ml) olive oil
- 1 medium bell pepper, diced (about 1 cup)

- 8 oz (225g) breakfast sausage or bacon, cooked and crumbled
- 2 cups (8oz/225g) shredded cheddar or Mexican-blend cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
Instructions
- Step 1: Prepare Your Equipment and Ingredients Preheat your oven to 375°F (190°C) and lightly grease a standard 12-cup muffin tin. While the oven heats, cook your breakfast meat if using raw, and chop all vegetables to have them ready for assembly.
- Step 2: Prepare the Egg Mixture In a medium bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until well combined.
- Step 3: Sauté the Vegetables Heat olive oil in a skillet over medium heat. Add the diced bell peppers and onions, sautéing until softened but still slightly crisp, about 3-4 minutes.
- Step 4: Assemble Your Tacos Gently press each tortilla into a muffin cup, creating a boat shape. Divide the cooked breakfast meat evenly among the tortilla cups, followed by the sautéed vegetables. Pour the egg mixture into each cup, filling about 3/4 full to allow room for expansion.
