  • 1 tablespoon (15ml) olive oil
  • 1 medium bell pepper, diced (about 1 cup)

  • 8 oz (225g) breakfast sausage or bacon, cooked and crumbled
  • 2 cups (8oz/225g) shredded cheddar or Mexican-blend cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Step 1: Prepare Your Equipment and Ingredients Preheat your oven to 375°F (190°C) and lightly grease a standard 12-cup muffin tin. While the oven heats, cook your breakfast meat if using raw, and chop all vegetables to have them ready for assembly.
  2. Step 2: Prepare the Egg Mixture In a medium bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until well combined.
  3. Step 3: Sauté the Vegetables Heat olive oil in a skillet over medium heat. Add the diced bell peppers and onions, sautéing until softened but still slightly crisp, about 3-4 minutes.
