  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime, cut into wedges for serving

Instructions

  1. Dice sweet potatoes into uniform ½-inch cubes. Chop the onion, bell pepper, and mince the garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Add sweet potatoes in a single layer and cook undisturbed for 3-4 minutes until beginning to brown.
  3. Add diced onion and bell pepper to the pan. Cook for 5-7 minutes until vegetables have softened and begun to caramelize.
  4. Add minced garlic and cook for 30 seconds until fragrant.
  5. Sprinkle cumin, smoked paprika, chili powder, salt, and pepper over the vegetable mixture. Stir well to coat everything evenly.
  6. Fold in the drained and rinsed black beans. Cook for 2-3 minutes until beans are heated through.
  7. Taste and adjust seasonings if needed. Remove from heat and garnish with fresh cilantro.
  8. Serve immediately with lime wedges for squeezing over the top.
