- 8 oz (226g) cream cheese, softened at room temperature
- 1/2 cup (113g) unsalted butter, softened at room temperature
- 4 cups (480g) powdered sugar, sifted
- 1/2 cup (about 75g) fresh strawberries, hulled and finely chopped
- 1 tablespoon fresh lemon juice
- 1 teaspoon pure vanilla extract
- 1/8 teaspoon salt
Instructions
- Chop strawberries and cook in a small saucepan over medium-low heat for 10-15 minutes until reduced by half. Stir in lemon juice and cool completely.
- Beat softened cream cheese and butter with an electric mixer for 3-4 minutes until completely smooth and fluffy.
- Add vanilla extract and salt, beating briefly to incorporate.
- Gradually add sifted powdered sugar one cup at a time, mixing thoroughly between additions.
- Gently fold in cooled strawberry reduction with a rubber spatula until desired color and consistency is achieved.
- Refrigerate frosting for 15-20 minutes before piping or spreading onto cooled cakes or cupcakes.
