- 4 boneless, skinless chicken breasts (about 6–8 oz each)
- 2 cups fresh spinach, roughly chopped
- 4 oz cream cheese, softened
- ½ cup mozzarella cheese, shredded
- ¼ cup parmesan cheese, freshly grated
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp red pepper flakes (optional)
Instructions
- Preheat oven to 375°F (190°C). Mix chopped spinach, cream cheese, mozzarella, parmesan, garlic, and red pepper flakes in a bowl.
- Pat chicken breasts dry. Cut a deep pocket into the thickest side of each breast, being careful not to cut all the way through.
- Season the inside of each pocket with salt and pepper. Stuff each breast with the spinach mixture.
- Secure openings with toothpicks. Mix Italian seasoning, paprika, salt, and pepper; rub over chicken after drizzling with olive oil.
- Heat an oven-safe skillet over medium-high heat. Sear chicken for 3-4 minutes on each side until golden.
- Transfer skillet to oven and bake for 15-20 minutes until chicken reaches 165°F (74°C).
- Remove from oven and let rest for 5 minutes. Remove toothpicks before serving.
