- 2 lbs (900g) boneless, skinless chicken breasts or thighs
- 4–5 fresh jalapenos, seeds removed for less heat or kept for extra spice
- 4 cloves garlic, minced
- 3 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 1 tablespoon honey
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ cup fresh cilantro, chopped (plus more for garnish)
- 1 lime, cut into wedges for serving
Instructions
- In a large bowl, combine minced garlic, olive oil, lime juice, honey, cumin, smoked paprika, oregano, salt, pepper, diced jalapenos (3 of them), and half the cilantro.
- Add chicken to the marinade, ensuring each piece is fully coated. Cover and refrigerate for at least 30 minutes, ideally 2-4 hours.
- Remove chicken from refrigerator 15-20 minutes before cooking. Preheat grill to medium-high or heat a skillet over medium-high heat.
- Cook chicken for 5-7 minutes per side on the grill or 6-8 minutes per side in a skillet until internal temperature reaches 165°F.
- Transfer cooked chicken to a plate and let rest for 5 minutes. Garnish with remaining cilantro and jalapeno rings. Serve with lime wedges.
