Ingredients

  • 2 lbs (900g) boneless, skinless chicken breasts or thighs
  • 45 fresh jalapenos, seeds removed for less heat or kept for extra spice
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup fresh cilantro, chopped (plus more for garnish)
  • 1 lime, cut into wedges for serving

Instructions

  1. In a large bowl, combine minced garlic, olive oil, lime juice, honey, cumin, smoked paprika, oregano, salt, pepper, diced jalapenos (3 of them), and half the cilantro.
  2. Add chicken to the marinade, ensuring each piece is fully coated. Cover and refrigerate for at least 30 minutes, ideally 2-4 hours.
  3. Remove chicken from refrigerator 15-20 minutes before cooking. Preheat grill to medium-high or heat a skillet over medium-high heat.
  4. Cook chicken for 5-7 minutes per side on the grill or 6-8 minutes per side in a skillet until internal temperature reaches 165°F.
  5. Transfer cooked chicken to a plate and let rest for 5 minutes. Garnish with remaining cilantro and jalapeno rings. Serve with lime wedges.
