Smothered Cheesy Sour Cream Chicken

  • 4 boneless, skinless chicken breasts (about 2 pounds)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 medium onion, finely diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1½ cups sour cream (full-fat)
  • 2 cups shredded cheese (mix of cheddar and mozzarella)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Pat chicken breasts dry with paper towels. Mix garlic powder, onion powder, oregano, paprika, salt, and pepper in a small bowl. Season both sides of chicken breasts with this mixture.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken and sear undisturbed for 4-5 minutes per side until golden brown. Transfer to a plate and tent with foil.
  3. Reduce heat to medium. Add diced onions to the same skillet and cook until translucent, about 3-4 minutes. Add minced garlic and cook for 30 seconds until fragrant.
  4. Pour in chicken broth, scraping up browned bits. Simmer until reduced by half, about 3-4 minutes. Reduce heat to low and gradually stir in sour cream until smooth. Simmer gently for 2-3 minutes.
  5. Preheat oven to 375°F (190°C). Return chicken to the skillet, nestling pieces into the sauce. Spoon sauce over chicken and sprinkle evenly with shredded cheese.
  6. Bake for 15-20 minutes until cheese is bubbly and chicken reaches 165°F (74°C) internal temperature.
  7. Let rest for 5 minutes before serving. Garnish with fresh parsley.
