Ingredients

Scale
  • 2 pounds (907g) ground beef or turkey
  • 1 medium onion, finely diced (about 1 cup/160g)
  • 3 garlic cloves, minced (about 1 tablespoon/9g)
  • 1 can (14.5 oz/411g) diced tomatoes, undrained
  • 1 can (10 oz/283g) Rotel tomatoes with green chilies
  • 2 tablespoons (30g) tomato paste
  • 1 packet (1.25 oz/35g) taco seasoning (or homemade blend)
  • 1 tablespoon (15ml) Worcestershire sauce
  • 1 cup (240ml) beef broth
  • 1 can (15 oz/425g) black beans, rinsed and drained
  • 1 can (15 oz/425g) corn kernels, drained
  • 810 oz (227-283g) Fritos corn chips
  • 2 cups (226g) shredded Mexican blend cheese

Instructions

  1. Step 1: Prepare the Meat Base Begin by browning your ground beef or turkey in a large skillet over medium-high heat. Break the meat into small crumbles as it cooks. When it’s about halfway done, add the diced onions and minced garlic, continuing to cook until the meat is no longer pink and the onions have softened. Drain any excess fat before transferring the mixture to your slow cooker.
  2. Step 2: Add Remaining Ingredients To your meat mixture in the slow cooker, add the diced tomatoes, Rotel tomatoes, tomato paste, taco seasoning, Worcestershire sauce, and beef broth. Stir everything thoroughly to combine, ensuring the seasoning is evenly distributed throughout the mixture. The combination of these ingredients creates the flavor foundation for your Slow Cooker Smothered Fritos Taco Bowls.
  3. Step 3: Set and Forget Cover your slow cooker and set it to low for 6-7 hours or high for 3-4 hours. The low and slow cooking method allows the flavors to meld beautifully and the meat to become incredibly tender. This hands-off cooking time is perfect for busy days when you want a delicious dinner without much active preparation.
  4. Step 4: Add Beans and Corn During the last 30 minutes of cooking time, stir in the drained and rinsed black beans and corn kernels. These additions bring texture, color, and nutritional value to your taco mixture. Replacing the lid, allow everything to heat through completely.
  5. Step 5: Assemble Your Taco Bowls When you’re ready to serve, place a generous handful of Fritos corn chips in individual bowls. Spoon the hot taco mixture over the chips, then top with shredded Mexican cheese while the meat is still hot so it melts slightly. Finish with your choice of toppings: a dollop of sour cream, a spoonful of guacamole, fresh cilantro, jalapeƱos, diced red onion, and a squeeze of lime juice. Your Slow Cooker Smothered Fritos Taco Bowls are now ready to enjoy!
