- 1 large yellow onion, quartered
- 6 garlic cloves, peeled and smashed
- 2–3 tablespoons Old Bay seasoning
- 2 tablespoons (30ml) butter, melted
- 2 lemons, one juiced and one cut into wedges for serving
- 4 cups (950ml) chicken broth
- 2 bay leaves
- Fresh parsley, chopped (for garnish)

- Step 1: Prepare The Base Place the halved baby red potatoes and quartered onion at the bottom of your 6-quart slow cooker. This creates a foundation that will cook thoroughly in the broth while lifting other ingredients away from direct heat. Pour in the chicken broth, then add 2 tablespoons of Old Bay seasoning, bay leaves, smashed garlic cloves, and lemon juice. Stir gently to distribute the seasonings throughout the liquid.
- Step 2: Add The Middle Layer Arrange the corn pieces and sliced sausage on top of the potato layer. The corn will absorb the seasoned broth while the sausage adds its smoky flavor to the cooking liquid. Drizzle the melted butter over everything, adding richness that will enhance the final dish.
