- 2 pounds boneless, skinless chicken breasts
- 1/3 cup fresh lime juice (about 3–4 limes)
- 1/4 cup honey
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon soy sauce (or tamari for gluten-free)
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Zest of 1 lime
- 2 tablespoons fresh cilantro, chopped (plus more for garnish)
Instructions
- In a medium bowl, whisk together lime juice, honey, minced garlic, olive oil, soy sauce, chili powder, cumin, paprika, salt, pepper, and lime zest until fully combined.
- Lightly spray the inside of your slow cooker with cooking spray or brush with olive oil. Place chicken breasts in a single layer.
- Pour the honey lime mixture over the chicken, making sure each piece is well coated.
- Cover and cook on low for 3-4 hours or on high for 2-3 hours, until chicken reaches 165°F and shreds easily.
- Transfer chicken to a cutting board and shred using two forks.
- Return shredded chicken to the slow cooker and mix thoroughly with the cooking liquid.
- Stir in fresh chopped cilantro and let sit in the warm slow cooker for an additional 10 minutes on the “keep warm” setting.
- Serve in tacos, over rice, in lettuce wraps, or in burrito bowls with your favorite toppings.
