Slow Cooker Honey Lime Shredded Chicken

  • 2 pounds boneless, skinless chicken breasts
  • 1/3 cup fresh lime juice (about 34 limes)
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Zest of 1 lime
  • 2 tablespoons fresh cilantro, chopped (plus more for garnish)

Instructions

  1. In a medium bowl, whisk together lime juice, honey, minced garlic, olive oil, soy sauce, chili powder, cumin, paprika, salt, pepper, and lime zest until fully combined.
  2. Lightly spray the inside of your slow cooker with cooking spray or brush with olive oil. Place chicken breasts in a single layer.
  3. Pour the honey lime mixture over the chicken, making sure each piece is well coated.
  4. Cover and cook on low for 3-4 hours or on high for 2-3 hours, until chicken reaches 165°F and shreds easily.
  5. Transfer chicken to a cutting board and shred using two forks.
  6. Return shredded chicken to the slow cooker and mix thoroughly with the cooking liquid.
  7. Stir in fresh chopped cilantro and let sit in the warm slow cooker for an additional 10 minutes on the “keep warm” setting.
  8. Serve in tacos, over rice, in lettuce wraps, or in burrito bowls with your favorite toppings.
