- 2 lbs boneless, skinless chicken thighs, cut into 1-inch chunks
- ¼ cup cornstarch
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons vegetable oil
- ½ cup low-sodium soy sauce
- ⅓ cup brown sugar, packed
- ¼ cup rice vinegar
- 3 tablespoons hoisin sauce
- 2 tablespoons tomato paste
- 2 tablespoons sriracha (adjust to taste)
- 1 tablespoon sesame oil
- 2 teaspoons Chinese five-spice powder
- 6–8 dried red chili peppers (optional)
- 1 tablespoon grated fresh ginger
- 4 garlic cloves, minced
- 2 tablespoons cornstarch mixed with 3 tablespoons water
- 4 green onions, sliced
- 2 tablespoons sesame seeds
- Steamed rice and broccoli, for serving
Instructions
- In a large bowl, toss chicken pieces with ¼ cup cornstarch, salt, and pepper until evenly coated.
- Heat vegetable oil in a large skillet over medium-high heat. Brown chicken in batches for about 2 minutes per side, then transfer to slow cooker.
- In a medium bowl, whisk together soy sauce, brown sugar, rice vinegar, hoisin sauce, tomato paste, sriracha, sesame oil, five-spice powder, ginger, and garlic.
- Pour sauce mixture over chicken in the slow cooker. Add dried chili peppers if using.
- Cover and cook on LOW for 3-4 hours or HIGH for 1.5-2 hours until chicken is tender.
- About 30 minutes before serving, prepare cornstarch slurry. Remove ½ cup of hot liquid from slow cooker, whisk in cornstarch mixture, then return to slow cooker.
- Continue cooking with lid slightly ajar for 30 minutes until sauce thickens.
- Stir in half the green onions. Serve over rice topped with remaining green onions and sesame seeds, with steamed broccoli on the side.
