Slow Cooker General Tso’s Chicken

Ingredients

  • 2 lbs boneless, skinless chicken thighs, cut into 1-inch chunks
  • ¼ cup cornstarch
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons vegetable oil
  • ½ cup low-sodium soy sauce
  • ⅓ cup brown sugar, packed
  • ¼ cup rice vinegar
  • 3 tablespoons hoisin sauce
  • 2 tablespoons tomato paste
  • 2 tablespoons sriracha (adjust to taste)
  • 1 tablespoon sesame oil
  • 2 teaspoons Chinese five-spice powder
  • 68 dried red chili peppers (optional)
  • 1 tablespoon grated fresh ginger
  • 4 garlic cloves, minced
  • 2 tablespoons cornstarch mixed with 3 tablespoons water
  • 4 green onions, sliced
  • 2 tablespoons sesame seeds
  • Steamed rice and broccoli, for serving

Instructions

  1. In a large bowl, toss chicken pieces with ¼ cup cornstarch, salt, and pepper until evenly coated.
  2. Heat vegetable oil in a large skillet over medium-high heat. Brown chicken in batches for about 2 minutes per side, then transfer to slow cooker.
  3. In a medium bowl, whisk together soy sauce, brown sugar, rice vinegar, hoisin sauce, tomato paste, sriracha, sesame oil, five-spice powder, ginger, and garlic.
  4. Pour sauce mixture over chicken in the slow cooker. Add dried chili peppers if using.
  5. Cover and cook on LOW for 3-4 hours or HIGH for 1.5-2 hours until chicken is tender.
  6. About 30 minutes before serving, prepare cornstarch slurry. Remove ½ cup of hot liquid from slow cooker, whisk in cornstarch mixture, then return to slow cooker.
  7. Continue cooking with lid slightly ajar for 30 minutes until sauce thickens.
  8. Stir in half the green onions. Serve over rice topped with remaining green onions and sesame seeds, with steamed broccoli on the side.
