- 2 pounds (900g) boneless, skinless chicken breasts
- 1 packet (1 oz/28g) Italian dressing mix
- ½ cup (120ml) chicken broth, low-sodium preferred
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian seasoning
- ¼ teaspoon red pepper flakes (optional)
- 8 oz (225g) cream cheese, softened and cubed
- 1 can (10.5 oz/298g) condensed cream of chicken soup
- ½ cup (50g) grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Step 1: Place the chicken breasts in a single layer at the bottom of your slow cooker. Pour the chicken broth over the chicken, then sprinkle evenly with the Italian dressing mix, garlic powder, Italian seasoning, and red pepper flakes (if using).
- Step 2: Cover and cook on low for 5-6 hours or on high for 3-4 hours. You’ll know the chicken is ready when it reaches an internal temperature of 165°F (74°C) and can be easily shredded with two forks.
- Step 3: About 30-45 minutes before serving, add the cubed cream cheese and condensed cream of chicken soup to the slow cooker. Stir gently to combine with the cooking liquid, breaking up larger chunks of cream cheese as needed.
- Step 4: Once the cream cheese has fully incorporated, use two forks to shred the chicken right in the slow cooker. Stir to ensure the shredded chicken is evenly coated with the creamy sauce.
- Step 5: Just before serving, stir in the grated Parmesan cheese until melted. Taste and adjust seasonings as needed, adding salt and freshly ground black pepper to your preference. Garnish with freshly chopped parsley for a bright finish both in flavor and presentation.
