- 3 pounds (1.4 kg) Yukon Gold potatoes, peeled and cut into 1-inch chunks
- 6 cloves garlic, peeled and minced (about 2 tablespoons)
- 1 cup (240 ml) chicken or vegetable broth
- 1/2 cup (115 g) unsalted butter, divided
- 3/4 cup (180 ml) whole milk or heavy cream, warmed
- 2 tablespoons fresh thyme leaves, chopped
- 1 tablespoon fresh rosemary, finely chopped
- 1/4 cup fresh chives, chopped
- 1–1/2 teaspoons salt (or to taste)
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup (60 ml) sour cream or crème fraîche (optional)
Instructions
- Step 1: Prepare the Potatoes Begin by thoroughly washing your potatoes under cool running water. Peel them completely, then cut into uniform 1-inch chunks to ensure even cooking. As you chop, place the cut pieces in a bowl of cold water to prevent oxidation if you’re prepping in advance.
- Step 2: Set Up Your Slow Cooker Drain the potato chunks and add them to your slow cooker. Scatter the minced garlic evenly throughout the potatoes. Pour in the chicken or vegetable broth, and add 1/4 cup (half) of the butter, cut into small pieces. Season with 1 teaspoon of salt and the black pepper.
- Step 3: Slow Cook to Perfection Cover the slow cooker and set to LOW for 6-7 hours or HIGH for 3-4 hours. The potatoes should be very tender when pierced with a fork—they should offer no resistance. Resist the urge to lift the lid during cooking as this releases heat and extends cooking time.
- Step 4: Prepare the Herb and Dairy Mixture About 15 minutes before the potatoes are done, warm your milk or cream in a small saucepan over low heat (or microwave carefully). In a small bowl, combine the warmed milk/cream with the remaining butter, chopped thyme, rosemary, and half of the chives.
- Step 5: Mash and Season Once the potatoes are perfectly tender, carefully drain any excess liquid from the slow cooker, reserving a small amount in case you need to adjust consistency later.
