- 2 lbs boneless, skinless chicken thighs, cut into 1.5-inch pieces
- 1 large onion, finely diced
- 4 cloves garlic, minced
- 2 tablespoons fresh ginger, grated
- 2 tablespoons vegetable oil
- 3 tablespoons butter
- 2 tablespoons garam masala
- 1 tablespoon ground cumin
- 1 tablespoon turmeric
- 1 teaspoon red chili powder
- 1 can (15 oz) tomato sauce
- 1 cup heavy cream
- 2 tablespoons lemon juice
- 1/2 cup plain yogurt
- 1/4 cup fresh cilantro, chopped
- Salt to taste
Instructions
- Pat chicken dry, cut into 1.5-inch pieces, and season with salt.
- Heat oil in a skillet over medium-high heat. Add onions and sauté until translucent, about 4-5 minutes.
- Add garlic and ginger, cooking for another minute until fragrant.
- Reduce heat to medium and add garam masala, cumin, turmeric, and chili powder. Stir continuously for 30-60 seconds.
- Transfer spice and onion mixture to slow cooker. Add chicken and tomato sauce, stirring to coat all pieces.
- Cover and cook on low for 4-5 hours or on high for 2-3 hours, until chicken is tender.
- During the final 30 minutes, stir in butter until melted.
- In a separate bowl, whisk together heavy cream, yogurt, and lemon juice, then gradually incorporate into the slow cooker.
- Taste and adjust seasonings as needed.
- Garnish with fresh cilantro before serving over basmati rice or with naan bread.
