  • 1 lb (454g) ground beef (80/20 lean-to-fat ratio)
  • 1 medium onion, finely diced (about 1 cup)
  • 1 green bell pepper, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 can (15 oz/425g) tomato sauce
  • 2 tablespoons tomato paste
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon yellow mustard
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups (8 oz/226g) elbow macaroni
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups (16 oz/473ml) milk
  • 2 cups (8 oz/226g) shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 6 large (10-inch) flour tortillas
  • 1 cup (4 oz/113g) additional shredded cheese (optional)

Instructions

  1. Brown ground beef in a large skillet over medium heat for 5 minutes, then add onions and green peppers. Cook until vegetables soften and meat is fully browned, about 3-4 more minutes.
  2. Add garlic and cook for 30 seconds, then stir in tomato sauce, tomato paste, brown sugar, Worcestershire sauce, mustard, and paprika. Season with salt and pepper.
  3. Simmer the sloppy joe mixture for 10-15 minutes until thickened, stirring occasionally. Remove from heat.
  4. Meanwhile, cook macaroni in salted water for 1-2 minutes less than package directions. Drain without rinsing.
  5. In the same pot, melt butter and whisk in flour. Cook for 1 minute, then gradually whisk in milk until smooth.
  6. Cook the milk mixture until thickened, about 3-5 minutes. Remove from heat and stir in cheese, garlic powder, and onion powder until smooth. Season with salt and pepper.
  7. Add cooked pasta to cheese sauce and gently combine.
  8. Warm tortillas briefly, then place on a flat surface and add about 1/3 cup mac and cheese across the middle of each tortilla.
  9. Top with 1/3 cup sloppy joe mixture and optional extra cheese.
  10. Fold in sides of tortillas, then roll from bottom up to form wraps.
  11. Optional: Place wraps seam-side down in a dry skillet over medium heat for 1-2 minutes until golden and sealed.
  12. Serve immediately or wrap in foil to keep warm.
