- 1 lb (454g) lean ground beef (85-90% lean)
- 1 medium yellow onion, finely diced (about 1 cup)
- 1 green bell pepper, diced (about 1 cup)
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 15 oz (425g) tomato sauce
- 2 tablespoons tomato paste
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 tablespoon yellow mustard
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups cooked rice (white, brown, or cauliflower rice)
- 1 cup shredded cheddar cheese
- 1/2 cup diced red onion
- 1/2 cup diced pickles
- 1/4 cup chopped fresh parsley
Instructions
- Heat a large skillet over medium-high heat and add olive oil. Once hot, add ground beef and break into small pieces. Cook until browned (5-7 minutes) then drain excess fat, leaving about 1 tablespoon.
- Add diced onions to the beef and cook for 3-4 minutes until softened. Add diced green peppers and cook for 2 minutes more. Add minced garlic and cook for 30 seconds until fragrant.
- Reduce heat to medium and add tomato sauce and tomato paste, stirring to combine. Add brown sugar, Worcestershire sauce, yellow mustard, chili powder, paprika, salt, and pepper. Stir until well combined.
- Reduce heat to low and simmer uncovered for 10-15 minutes, stirring occasionally. If mixture becomes too thick, add a splash of water or beef broth.
- While meat simmers, prepare your base ingredients. Divide cooked rice among serving bowls.
- Top rice with hot Sloppy Joe mixture, then immediately sprinkle with shredded cheddar cheese so it begins to melt.
- Finish bowls with diced red onions, chopped pickles, and fresh parsley. Serve immediately while hot.
