Sheet Pan Kielbasa Potatoes and Green Beans

Ingredients

  • 1 pound (450g) kielbasa sausage, sliced into ¼-inch rounds
  • pounds (680g) baby potatoes, halved or quartered if large
  • 1 pound (450g) fresh green beans, trimmed
  • 3 tablespoons olive oil, divided
  • 4 garlic cloves, minced
  • 1 teaspoon paprika (smoked paprika preferred)
  • 1 teaspoon dried oregano
  • ½ teaspoon onion powder
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon fresh lemon juice (optional)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper or aluminum foil.
  2. In a large bowl, toss potatoes with 2 tablespoons olive oil, half the minced garlic, paprika, oregano, onion powder, ½ teaspoon salt, and ¼ teaspoon black pepper.
  3. Arrange seasoned potatoes in a single layer on the sheet pan, cut-side down. Roast for 15 minutes.
  4. Remove the pan from oven, add sliced kielbasa distributed evenly among the potatoes, and return to oven for another 10 minutes.
  5. Meanwhile, toss green beans with remaining 1 tablespoon olive oil, remaining garlic, and a pinch of salt and pepper.
  6. Add seasoned green beans to the sheet pan after the kielbasa has cooked for 10 minutes. Continue roasting for a final 8-10 minutes until beans are tender-crisp and potatoes are golden.
  7. Remove from oven and drizzle with optional lemon juice. Sprinkle with chopped parsley if desired.
  8. Serve hot directly from the pan or transfer to a serving platter.
