  • 1 lb (450g) ground chicken
  • 2 tablespoons sesame oil, divided
  • 3 cloves garlic, minced (about 1 tablespoon)
  • 1 tablespoon fresh ginger, grated
  • ¼ cup (60ml) low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 2 tablespoons sesame seeds, plus more for garnish
  • 3 green onions, thinly sliced
  • ¼ teaspoon red pepper flakes (optional, for heat)

Instructions

  1. Prepare all ingredients: mince garlic, grate ginger, slice green onions, and if desired, toast sesame seeds in a dry pan until golden.
  2. Heat 1 tablespoon sesame oil in a large skillet over medium-high heat. Add ground chicken, breaking it into small pieces. Cook for 5-6 minutes until no longer pink.
  3. Push chicken to one side of the pan. Add garlic and ginger to the cleared area and cook for 30 seconds until fragrant.
  4. Pour in soy sauce, honey, and rice vinegar. Stir everything together, scraping up any browned bits. Simmer for 2-3 minutes until sauce thickens slightly.
  5. Remove from heat and stir in remaining tablespoon of sesame oil, most of the sesame seeds, and most of the green onions.
  6. Garnish with reserved sesame seeds, green onions, and red pepper flakes if using. Serve immediately over rice or in lettuce cups.
