  • 8 slices white sandwich bread, crusts removed (about 6 oz/170g)
  • 8 breakfast sausage links, fully cooked (approximately 5 oz/140g)
  • 2 large eggs
  • 1/4 cup (60ml) whole milk
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg (optional)
  • 2 tablespoons (30g) unsalted butter, for cooking
  • Maple syrup, for serving

Instructions

  1. Remove crusts from bread slices and flatten each slice with a rolling pin until thin and pliable.
  2. In a shallow bowl, whisk together eggs, milk, sugar, vanilla, cinnamon, and nutmeg until well combined.
  3. Place one cooked sausage link at one end of each flattened bread slice and roll up tightly, pressing the edge to seal.
  4. Melt 1 tablespoon butter in a non-stick skillet over medium heat.
  5. Quickly dip each roll-up in the egg mixture, coating all sides, and place in the skillet seam-side down.
  6. Cook for 2-3 minutes, rotating frequently, until all sides are golden brown and crispy.
  7. Cook remaining roll-ups in batches, adding more butter as needed.
  8. Briefly drain on paper towels and serve immediately with maple syrup for dipping.
