- 8 large eggs
- 1 lb (450g) breakfast sausage, casings removed if using links
- 2 cups (225g) shredded cheddar cheese
- 8 flour tortillas (8-inch/20cm size)
- 1/4 cup (60ml) milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 2 tablespoons (30g) butter
- 2 green onions, thinly sliced (optional)
- 1 tablespoon vegetable oil (for cooking roll-ups)
Instructions
- Heat a large non-stick skillet over medium heat. Cook breakfast sausage, breaking it apart until completely browned (6-8 minutes). Transfer to a paper towel-lined plate, reserving 1 tablespoon of drippings in the pan.
- Whisk eggs, milk, salt, pepper, and garlic powder in a large bowl until frothy. Pour into the same skillet over medium-low heat and cook, gently stirring until just set but still slightly moist (3-4 minutes).
- Remove from heat and fold in the cooked sausage and 1 cup of shredded cheese until combined.
- Warm tortillas between damp paper towels in the microwave for 20-30 seconds until pliable.
- Lay each tortilla flat and spoon about 1/3 cup of egg-sausage mixture across the lower third. Sprinkle with additional cheese and green onions if using.
- Fold in both sides of the tortilla, then roll from bottom up to enclose the filling. Place seam-side down.
- Heat a clean skillet over medium heat with oil or butter. Cook roll-ups seam-side down first for 2-3 minutes, then rotate to brown all sides until golden and crispy.
- Let rest 1-2 minutes before serving. Cut in half diagonally if desired.
