Sausage Egg and Cheese Breakfast Roll-Ups


Description

These sausage egg and cheese roll-ups are the breakfast hack you’ve been waiting for – crispy on the outside, gooey on the inside, and perfectly portable for your busiest mornings.

  • 8 large eggs
  • 1 lb (450g) breakfast sausage, casings removed if using links
  • 2 cups (225g) shredded cheddar cheese
  • 8 flour tortillas (8-inch/20cm size)
  • 1/4 cup (60ml) milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 tablespoons (30g) butter
  • 2 green onions, thinly sliced (optional)
  • 1 tablespoon vegetable oil (for cooking roll-ups)

Instructions

  1. Heat a large non-stick skillet over medium heat. Cook breakfast sausage, breaking it apart until completely browned (6-8 minutes). Transfer to a paper towel-lined plate, reserving 1 tablespoon of drippings in the pan.
  2. Whisk eggs, milk, salt, pepper, and garlic powder in a large bowl until frothy. Pour into the same skillet over medium-low heat and cook, gently stirring until just set but still slightly moist (3-4 minutes).
  3. Remove from heat and fold in the cooked sausage and 1 cup of shredded cheese until combined.
  4. Warm tortillas between damp paper towels in the microwave for 20-30 seconds until pliable.
  5. Lay each tortilla flat and spoon about 1/3 cup of egg-sausage mixture across the lower third. Sprinkle with additional cheese and green onions if using.
  6. Fold in both sides of the tortilla, then roll from bottom up to enclose the filling. Place seam-side down.
  7. Heat a clean skillet over medium heat with oil or butter. Cook roll-ups seam-side down first for 2-3 minutes, then rotate to brown all sides until golden and crispy.
  8. Let rest 1-2 minutes before serving. Cut in half diagonally if desired.
