For the Muffin Batter:
- 1 pound breakfast sausage
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder (optional)
- 1/2 cup milk
- 1/4 cup melted butter
- 2 large eggs
For the Filling:
- 1 cup shredded cheddar cheese
- 1/2 cup finely chopped onions (optional)
- 1/2 cup chopped bell peppers (optional)
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
- Cook the Sausage: In a large skillet, cook the breakfast sausage over medium heat until it’s browned and crumbled. If you’re using vegetables like onions or bell peppers, sauté them in the pan with the sausage until softened. Drain any excess fat and set aside to cool.
- Prepare the Muffin Batter: In a large bowl, whisk together the flour, baking powder, salt, pepper, and garlic powder (if using). In a separate bowl, whisk together the milk, melted butter, and eggs. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Assemble the Muffins: Spoon the muffin batter into each muffin cup, filling about halfway. Add a spoonful of the sausage and vegetable mixture on top of the batter, then sprinkle with shredded cheddar cheese. Top with a little more muffin batter to cover the filling.
- Bake the Muffins: Bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean. Allow the muffins to cool for a few minutes before removing them from the tin.
