  • 1 lb (450g) smoked sausage or kielbasa, sliced into ¼-inch rounds
  • 1 medium head green cabbage (about 2 lbs/900g), cored and thinly sliced
  • 1 medium yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil, divided
  • 1 tablespoon butter
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon caraway seeds (optional)
  • ½ teaspoon red pepper flakes (adjust to taste)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Slice sausage into ¼-inch rounds. Core cabbage and slice into thin strips. Slice onion thinly and mince garlic.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add sausage slices in a single layer and brown for 2-3 minutes per side until edges are crisp. Transfer to a plate.
  3. Add remaining tablespoon of olive oil to the same pan. Add onions and cook for 3-4 minutes until translucent. Add garlic and cook for 30 seconds until fragrant.
  4. Add butter to the pan. Once melted, add sliced cabbage, salt, pepper, caraway seeds (if using), and red pepper flakes. Stir well and cook for 5-7 minutes until cabbage begins to soften but still has some crispness.
  5. Return browned sausage to the pan. Stir in apple cider vinegar and cook for another 2-3 minutes to allow flavors to meld.
  6. Taste and adjust seasonings as needed. Remove from heat, sprinkle with fresh parsley, and serve immediately.
