- 1 lb (450g) smoked sausage or kielbasa, sliced into ¼-inch rounds
- 1 medium head green cabbage (about 2 lbs/900g), cored and thinly sliced
- 1 medium yellow onion, thinly sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil, divided
- 1 tablespoon butter
- 1 tablespoon apple cider vinegar
- 1 teaspoon caraway seeds (optional)
- ½ teaspoon red pepper flakes (adjust to taste)
- Salt and freshly ground black pepper, to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Slice sausage into ¼-inch rounds. Core cabbage and slice into thin strips. Slice onion thinly and mince garlic.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add sausage slices in a single layer and brown for 2-3 minutes per side until edges are crisp. Transfer to a plate.
- Add remaining tablespoon of olive oil to the same pan. Add onions and cook for 3-4 minutes until translucent. Add garlic and cook for 30 seconds until fragrant.
- Add butter to the pan. Once melted, add sliced cabbage, salt, pepper, caraway seeds (if using), and red pepper flakes. Stir well and cook for 5-7 minutes until cabbage begins to soften but still has some crispness.
- Return browned sausage to the pan. Stir in apple cider vinegar and cook for another 2-3 minutes to allow flavors to meld.
- Taste and adjust seasonings as needed. Remove from heat, sprinkle with fresh parsley, and serve immediately.
