  • 1 pound salmon fillet with skin
  • 12 oz rigatoni (or favorite pasta)
  • 4 cups baby spinach leaves
  • 1/2 cup Greek yogurt
  • Seasonings:
  • 2 teaspoons dried dill (or 1 tablespoon fresh)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Zest of one lemon
  • Fresh lemon juice
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Step 1 – Preheat and Season Salmon. Preheat oven to 400°F. Place salmon skin-side down on a lined baking sheet. Season with dill, lemon zest, salt, and pepper.
  2. Step  2 – Bake Salmon. Bake for 7–10 minutes until opaque and flaking easily. Remove from skin and break into chunks.
  3. Step 3 – Cook Pasta. Cook pasta al dente (8–10 minutes). Reserve 1 cup of pasta water before draining.
  4. Step  4 – Prepare Sauce. Return pasta to the pot over low heat. Add spinach and toss until wilted. Mix in yogurt, lemon juice, and red pepper flakes. Use reserved pasta water to thin the sauce if needed.
  5. Step 5 – Combine and Serve. Gently toss in the salmon chunks until coated with the sauce. Remove from heat and serve.
