Rotisserie Chicken Sandwich


Description

The secret to the best sandwich you’ll make all week? Start with a rotisserie chicken, add a few fresh ingredients, and prepare for compliments – this one disappears fast!


Ingredients

  • 2 cups shredded rotisserie chicken (white and dark meat)
  • 4 slices artisan bread (sourdough, ciabatta, or whole grain)
  • 3 Tbsp mayonnaise
  • 1 Tbsp Dijon mustard
  • 1 tsp honey
  • 1 cup mixed greens or arugula
  • 1 medium tomato, sliced
  • ½ avocado, sliced
  • ¼ red onion, thinly sliced
  • 4 slices bacon, cooked until crispy (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Combine mayonnaise, Dijon mustard, and honey in a small bowl, stirring until smooth.
  2. Lightly toast bread slices until golden brown with a slight crunch on the outside.
  3. Spread the sauce generously on all bread slices, then arrange a layer of greens on the bottom slice.
  4. Layer tomato slices on top of the greens, season with salt and pepper, then add avocado slices and red onion. Add bacon if using.
  5. Place shredded rotisserie chicken evenly on top of the vegetables.
  6. Top with the remaining slice of bread, press gently, and slice diagonally before serving.
