- 2 cups shredded rotisserie chicken (white and dark meat)
- 4 slices artisan bread (sourdough, ciabatta, or whole grain)
- 3 Tbsp mayonnaise
- 1 Tbsp Dijon mustard
- 1 tsp honey
- 1 cup mixed greens or arugula
- 1 medium tomato, sliced
- ½ avocado, sliced
- ¼ red onion, thinly sliced
- 4 slices bacon, cooked until crispy (optional)
- Salt and freshly ground black pepper to taste
Instructions
- Combine mayonnaise, Dijon mustard, and honey in a small bowl, stirring until smooth.
- Lightly toast bread slices until golden brown with a slight crunch on the outside.
- Spread the sauce generously on all bread slices, then arrange a layer of greens on the bottom slice.
- Layer tomato slices on top of the greens, season with salt and pepper, then add avocado slices and red onion. Add bacon if using.
- Place shredded rotisserie chicken evenly on top of the vegetables.
- Top with the remaining slice of bread, press gently, and slice diagonally before serving.
