  • 1 tablespoon lemon juice
  • 1 teaspoon salt

Instructions

  1. Step 1: Prepare the marinade by whisking together Dijon mustard, chopped rosemary, minced garlic, olive oil, honey, lemon juice, salt, pepper, and dried thyme (if using) in a medium bowl until thoroughly combined. The mixture should have a smooth, creamy consistency that will coat the chicken beautifully.
  2. Step 2: Pound the chicken breasts between two sheets of plastic wrap to an even thickness of about ½-inch using a meat mallet or heavy pan. Pat dry with paper towels.
  3. Step 3: Coat the chicken breasts thoroughly with the marinade, ensuring even coverage on all sides. Refrigerate for 30 minutes to 8 hours for deeper flavor penetration.
  4. Step 4: Heat a skillet over medium-high and add 1 tablespoon of olive oil. Cook the marinated chicken for 5-6 minutes on the first side until golden brown, then flip and cook for another 5-7 minutes until the internal temperature reaches 165°F (74°C).
