- 2 large sweet potatoes, washed and scrubbed
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon smoked paprika
- ¾ cup crumbled feta cheese
- ¼ cup honey
- 2 tablespoons chopped fresh parsley
Instructions
- Step 1: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Step 2: Slice the sweet potatoes into ½-inch thick rounds.
- Step 3: In a large bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika until evenly coated.
- Step 4: Arrange the sweet potato slices in a single layer on the prepared baking sheet.
- Step 5: Roast in the preheated oven for 25-30 minutes, turning halfway through, until they are tender and golden brown.
- Step 6: Remove from the oven and allow to cool slightly.
- Step 7: Arrange the roasted sweet potato rounds on a serving platter.
- Step 8: Sprinkle crumbled feta cheese over the top of the sweet potatoes.
- Step 9: Drizzle with honey and garnish with freshly chopped parsley.
