- 2.5 pounds red beets, cleaned, peeled, and cut into 1.5-inch chunks
- 1 pound sweet potatoes, cleaned, peeled, and cut into 1.5-inch chunks
- 3.5 tablespoons avocado oil, divided
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon chili powder
- ½ teaspoon ground cayenne pepper
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon dried oregano
- 3 tablespoons crumbled feta cheese
- 2 tablespoons chopped cilantro leaves (optional)
Instructions
- Step 1: Preheat the Oven: Preheat your oven to 425°F (220°C).
