  • Powdered Sugar: 1/2 cup – Adds sweetness and helps bind the ingredients together.
  • Chocolate Chips: 1 1/2 cups – Semi-sweet or milk chocolate chips for coating.
  • Butter: 1/4 cup – Adds richness to the peanut butter mixture and helps melt the chocolate.
  • Vanilla Extract: 1 teaspoon (optional) – For added depth of flavor in the peanut butter mixture.

Instructions

  1. Prepare the Peanut Butter Mixture: In a medium mixing bowl, combine the peanut butter and powdered sugar. Stir until the mixture is smooth and well combined. The texture should be thick enough to spread between the crackers but still soft.
  2. Assemble the Cookies: Take one Ritz cracker and spread a generous layer of the peanut butter mixture on top. Place another Ritz cracker on top to form a sandwich. Repeat this process until all crackers are used and you have peanut butter-filled crackers.
  3. Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and butter. Microwave the mixture in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth. You can also use a double boiler for this step if you prefer.
  4. Coat the Cookies: Using a fork or tongs, dip each peanut butter sandwich into the melted chocolate, making sure the entire cracker is coated. Allow any excess chocolate to drip off before placing the cookies on a parchment-lined baking sheet.
