- 1 pound (450g) large shrimp, peeled and deveined (tails on or off)
- 2 tablespoons olive oil
- 1 medium onion, finely diced (about 1 cup)
- 3 garlic cloves, minced
- 1–2 jalapeños, seeded and finely chopped
- 1 red bell pepper, diced
- 2 tablespoons tomato paste
- 1 teaspoon smoked paprika
- ½ teaspoon crushed red pepper flakes (optional)
- 1 can (14.5 oz/411g) diced tomatoes
- 4 cups (950ml) seafood or chicken broth
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon fresh lime juice
- ¼ cup fresh cilantro, chopped
- 1 avocado, diced (for garnish)
- Lime wedges (for serving)
Instructions
- Step 1: Prepare the shrimp Rinse the shrimp under cold water and pat dry with paper towels. If you purchased shell-on shrimp, peel and devein them, optionally leaving the tails on for presentation. Place the prepared shrimp in a bowl, season with a pinch of salt and pepper, and refrigerate until needed. - Step 2: Build the flavor base Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook for 3-4 minutes until softened and translucent. Stir in the minced garlic, chopped jalapeños, and bell pepper, cooking for another 2 minutes until fragrant. This aromatic base will give your spicy shrimp broth its distinctive character.
