  • 2 tablespoons (28g) melted unsalted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 cup (60g) chopped pecans or walnuts (optional)
  • 1/3 cup (60g) dried cranberries or raisins (optional)

Instructions

  1. Step 1: Preheat your oven to 350°F (175°C) and generously grease a 9×9-inch baking dish with butter or cooking spray. This preparation ensures your Pumpkin Baked Oatmeal won’t stick and will develop those desirable crispy edges.
