Description

Pioneer Woman Quiche loaded with bacon, cheese, and spinach. Easy, comforting, and perfect for brunch.

Ingredients

Scale
  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 teaspoon salt
  • 4 tablespoons (60ml) ice water
  • 1/2 cup (113g) cold unsalted butter, cubed
  • 6 large eggs
  • 1 1/2 cups (360ml) heavy cream
  • 8 oz (227g) bacon, cooked and crumbled
  • 1 cup (113g) shredded cheddar cheese
  • 1 cup (113g) Swiss cheese, grated
  • 1/4 cup (25g) green onions, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper (optional)

Instructions

  1. Step 1: Prepare the Crust Begin by combining the flour and salt in a large bowl. Add the cold, cubed butter and use a pastry cutter or two forks to work it into the flour until the mixture resembles coarse crumbs with some pea-sized pieces remaining. This varying butter size creates the perfect flaky texture in your Pioneer Woman Quiche crust. Gradually add the ice water, 1 tablespoon at a time, mixing gently until the dough just comes together. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
  2. Step 2: Roll and Par-Bake the Crust Preheat your oven to 375°F (190°C). Roll the chilled dough on a floured surface into a circle about 12 inches in diameter and 1/8 inch thick. Carefully transfer to a 9-inch pie dish or quiche pan, pressing gently into the corners. Trim excess dough, leaving a 1/2-inch overhang, then fold and crimp the edges. Prick the bottom with a fork, line with parchment paper, and fill with pie weights. Bake for 15 minutes, remove the weights and parchment, and bake for another 5 minutes until just starting to color.
  3. Step 3: Prepare the Filling While the crust is par-baking, whisk together the eggs and heavy cream until well combined. This is the foundation of your Pioneer Woman Quiche filling, so whisk thoroughly to incorporate air for a lighter texture. Add salt, pepper, and cayenne if using. Stir in the crumbled bacon, cheeses, and green onions, reserving a small amount of each for topping.
  4. Step 4: Assemble and Bake Reduce oven temperature to 350°F (175°C). Pour the filling into the par-baked crust, sprinkle with the reserved toppings, and place on a baking sheet to catch any potential overflow. Bake for 45-50 minutes until the edges are set but the center still has a slight jiggle. If the crust edges brown too quickly, cover them with a pie shield or aluminum foil. The Pioneer Woman Quiche will continue setting as it cools, so avoid overbaking.
  5. Step 5: Rest and Serve Allow your Pioneer Woman Quiche to rest for 15 minutes before slicing. This crucial step ensures clean slices and allows the flavors to meld together. Serve warm or at room temperature for the best flavor experience, garnished with additional fresh herbs if desired.
