- 2½ cups (310g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 cup (226g) cold unsalted butter, cut into small cubes
- 1 large egg, lightly beaten
- ½ teaspoon vanilla extract
- 4 cups (about 5–6 medium) fresh peaches, peeled and diced
- ½ cup (100g) granulated sugar
- ¼ cup (30g) cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and lightly spray with cooking spray.
- In a large bowl, whisk together flour, sugar, baking powder, and salt. Add cold cubed butter and cut in with a pastry cutter until mixture resembles coarse crumbs.
- Stir in beaten egg and vanilla extract until just combined. The mixture should be crumbly.
- Press about two-thirds of the mixture firmly into the prepared pan. Refrigerate while preparing the filling.
- In a medium saucepan, combine diced peaches, sugar, cornstarch, lemon juice, cinnamon, and nutmeg. Cook over medium heat, stirring frequently, until mixture bubbles and thickens (4-5 minutes).
- Spread the peach filling evenly over the chilled crust.
- Crumble the remaining dough mixture over the top of the peach layer.
- Bake for 40-45 minutes, until top is golden brown and filling is bubbling around edges.
- Cool completely in the pan on a wire rack (1-2 hours).
- Refrigerate for at least 2 hours before cutting into squares for the cleanest cuts.
