Peach Baked Oatmeal

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1/2 cup light brown sugar, packed
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 2 cups milk (dairy or plant-based)
  • 2 large eggs
  • 3 tablespoons unsalted butter, melted and slightly cooled
  • 2 teaspoons pure vanilla extract
  • 2 1/2 cups fresh peaches, diced (about 34 medium peaches)
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a large bowl, mix oats, brown sugar, baking powder, cinnamon, salt, and nutmeg.
  3. In a separate bowl, whisk together milk, eggs, melted butter, and vanilla extract.
  4. Pour wet ingredients into dry ingredients and stir until thoroughly combined.
  5. Gently fold in 2 cups of the diced peaches and half of the nuts (if using), reserving some for topping.
  6. Pour mixture into prepared baking dish and top with remaining peaches and nuts.
  7. Bake for 40-45 minutes until the top is golden brown and the center is set but still slightly moist.
  8. Allow to cool for 10 minutes before serving with optional toppings like maple syrup, yogurt, or a splash of milk.
