- 2 cups old-fashioned rolled oats
- 1/2 cup light brown sugar, packed
- 1 teaspoon baking powder
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 2 cups milk (dairy or plant-based)
- 2 large eggs
- 3 tablespoons unsalted butter, melted and slightly cooled
- 2 teaspoons pure vanilla extract
- 2 1/2 cups fresh peaches, diced (about 3–4 medium peaches)
- 1/2 cup chopped pecans or walnuts (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease an 8×8 inch baking dish.
- In a large bowl, mix oats, brown sugar, baking powder, cinnamon, salt, and nutmeg.
- In a separate bowl, whisk together milk, eggs, melted butter, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir until thoroughly combined.
- Gently fold in 2 cups of the diced peaches and half of the nuts (if using), reserving some for topping.
- Pour mixture into prepared baking dish and top with remaining peaches and nuts.
- Bake for 40-45 minutes until the top is golden brown and the center is set but still slightly moist.
- Allow to cool for 10 minutes before serving with optional toppings like maple syrup, yogurt, or a splash of milk.
