Crispy, cheesy Parmesan Garlic Cabbage is your new veggie obsession. Just one bite of these caramelized, garlicky wedges and you’ll never look at cabbage the same way again.

- 1 medium green cabbage (2–3 pounds)
- 4 tablespoons olive oil, divided
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 6 garlic cloves, minced (about 2 tablespoons)
- 1 cup freshly grated Parmesan cheese, divided
- 2 tablespoons fresh parsley, chopped
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Preheat oven to 425°F (220°C). Remove outer leaves from cabbage, wash and thoroughly dry it.
- Cut cabbage into 1-inch thick rounds or wedges, keeping core intact. Arrange on a parchment-lined baking sheet.
- Drizzle 2 tablespoons olive oil over cabbage and season with salt and pepper. Massage seasoning into all surfaces.
- Roast for 15 minutes until edges begin to turn golden.
- Mix remaining 2 tablespoons olive oil with minced garlic in a small bowl. In another bowl, combine 3/4 cup Parmesan and red pepper flakes.
- Remove cabbage from oven, brush with garlic-oil mixture, then sprinkle with Parmesan mixture.
- Return to oven and roast 10-15 minutes more until cabbage is tender and cheese forms a golden crust.
- Let rest 2-3 minutes, then sprinkle with remaining Parmesan and parsley before serving.
