- 1 to 2 hearts of romaine lettuce
- 2 shallots, thinly sliced
- 2 lemons, zested and juiced
- ¼ cup extra virgin olive oil
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- ¼ teaspoon crushed red chili pepper flakes, optional
- 1 cup finely grated parmesan cheese
Instructions
- Step 1: We like shallots for their mildness, sweetness, and nice crunch. If you like bolder flavor, use thinly sliced red onions that you’ve soaked in cold water instead.
- Step 2: Use freshly grated Parmesan cheese for the chopped salad . It’s way better than store-bought pre-shredded Parmesan sold in plastic cans.
- Step 3: Add more veggies and croutons to make your chopped salad more substantial.
