  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 3 medium very ripe bananas (about 1 1/2 cups mashed)
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups (180g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 8 oz (226g) cream cheese, softened
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/4 cup (57g) unsalted butter, melted
  • 4 cups (460g) powdered sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and spray lightly with cooking spray.
  2. Mash bananas in a large bowl. Add 1/2 cup melted butter and granulated sugar, whisking until combined.
  3. Beat in 2 eggs one at a time, then stir in 1 teaspoon vanilla extract until smooth.
  4. In a separate bowl, whisk together flour, baking powder, salt, and 1/2 teaspoon cinnamon.
  5. Fold dry ingredients into banana mixture until just combined. Spread evenly in prepared pan.
  6. For the gooey layer, beat cream cheese until completely smooth. Add 2 eggs one at a time, then mix in 1 teaspoon vanilla.
  7. Mix in 1/4 cup melted butter, then gradually add powdered sugar and 1/2 teaspoon cinnamon until smooth.
  8. Pour gooey mixture over banana base layer, spreading evenly.
  9. Bake 35-40 minutes until edges are set and golden but center still has a slight jiggle.
  10. Cool completely, then refrigerate for at least 2 hours before cutting into squares.
