- 1/2 cup (113g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 large eggs, room temperature
- 3 medium very ripe bananas (about 1 1/2 cups mashed)
- 1 teaspoon pure vanilla extract
- 1 1/2 cups (180g) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 8 oz (226g) cream cheese, softened
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1/4 cup (57g) unsalted butter, melted
- 4 cups (460g) powdered sugar
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and spray lightly with cooking spray.
- Mash bananas in a large bowl. Add 1/2 cup melted butter and granulated sugar, whisking until combined.
- Beat in 2 eggs one at a time, then stir in 1 teaspoon vanilla extract until smooth.
- In a separate bowl, whisk together flour, baking powder, salt, and 1/2 teaspoon cinnamon.
- Fold dry ingredients into banana mixture until just combined. Spread evenly in prepared pan.
- For the gooey layer, beat cream cheese until completely smooth. Add 2 eggs one at a time, then mix in 1 teaspoon vanilla.
- Mix in 1/4 cup melted butter, then gradually add powdered sugar and 1/2 teaspoon cinnamon until smooth.
- Pour gooey mixture over banana base layer, spreading evenly.
- Bake 35-40 minutes until edges are set and golden but center still has a slight jiggle.
- Cool completely, then refrigerate for at least 2 hours before cutting into squares.
