No-Peek Chicken Casserole

Ingredients

  • 2 cups uncooked long-grain white rice
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 (10.5 oz) can cream of chicken soup
  • 2 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 (1 oz) packet dry onion soup mix

Instructions

  1. Preheat oven to 350°F (175°C). Spray a 9×13-inch baking dish with non-stick cooking spray.
  2. In a large bowl, mix together rice, both soups, chicken broth, garlic powder, onion powder, thyme, and black pepper. Pour mixture into prepared baking dish.
  3. Arrange chicken pieces in a single layer on top of the rice mixture.
  4. Sprinkle the entire packet of dry onion soup mix evenly over the chicken.
  5. Cover tightly with aluminum foil, sealing the edges well.
  6. Bake for 2 to 2½ hours without opening the oven or removing the foil.
  7. Remove from oven and let rest, still covered, for 10-15 minutes.
  8. Remove foil carefully and serve hot.
