- 2 cups uncooked long-grain white rice
- 1 (10.5 oz) can cream of mushroom soup
- 1 (10.5 oz) can cream of chicken soup
- 2 cups chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried thyme
- 1/4 teaspoon black pepper
- 2 pounds boneless, skinless chicken breasts or thighs
- 1 (1 oz) packet dry onion soup mix
Instructions
- Preheat oven to 350°F (175°C). Spray a 9×13-inch baking dish with non-stick cooking spray.
- In a large bowl, mix together rice, both soups, chicken broth, garlic powder, onion powder, thyme, and black pepper. Pour mixture into prepared baking dish.
- Arrange chicken pieces in a single layer on top of the rice mixture.
- Sprinkle the entire packet of dry onion soup mix evenly over the chicken.
- Cover tightly with aluminum foil, sealing the edges well.
- Bake for 2 to 2½ hours without opening the oven or removing the foil.
- Remove from oven and let rest, still covered, for 10-15 minutes.
- Remove foil carefully and serve hot.
