Ingredients

  • 1 cup smooth peanut butter
  • 2 cups powdered sugar, sifted
  • ¼ cup unsalted butter, melted
  • 1 cup graham cracker crumbs
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 2 cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil or shortening

Instructions

  1. In a large mixing bowl, combine peanut butter and melted butter until smooth. Add vanilla extract and salt, stirring to incorporate.
  2. Gradually add powdered sugar and graham cracker crumbs to the peanut butter mixture, stirring until fully combined and a dough-like consistency forms.
  3. Line a baking sheet with parchment paper. Using a tablespoon or cookie scoop, portion the mixture and roll into 1-inch balls. Place on the prepared baking sheet.
  4. Freeze the formed peanut butter balls for 30 minutes or refrigerate for 1 hour until firm.
  5. Combine chocolate chips and coconut oil in a microwave-safe bowl. Heat in 30-second intervals at 50% power, stirring between each, until completely melted and smooth.
  6. Working with a few balls at a time (keeping the rest chilled), use a fork to dip each ball into the melted chocolate. Tap the fork gently against the bowl to remove excess chocolate.
  7. Return the chocolate-coated balls to the parchment paper and allow to set completely at room temperature (about 15 minutes) or in the refrigerator (5-10 minutes).
  8. Store in an airtight container in the refrigerator for up to two weeks or freeze for up to three months.
