These No-Bake Fireworks Oreo Cheesecake Bars bring the celebration without turning on your oven. Cool, creamy, and festive for any summer gathering.

- 24 Oreo cookies (regular, not Double Stuf)
- 5 tablespoons unsalted butter, melted
- 16 ounces cream cheese, softened to room temperature
- 1 cup powdered sugar, sifted
- 1 teaspoon pure vanilla extract
- 1 tablespoon fresh lemon juice
- 1 cup heavy whipping cream, cold
- ¼ cup patriotic sprinkles (red, white, and blue), plus extra for topping
- 8 Oreo cookies, roughly chopped
Instructions
- Line a 9×9-inch baking pan with parchment paper, leaving overhang on the sides for easy removal later.
- Process Oreo cookies (with filling) into fine crumbs, mix with melted butter, and press firmly into the bottom of the prepared pan. Refrigerate while making the filling.
- Beat softened cream cheese until smooth, then add powdered sugar, vanilla extract, and lemon juice, beating until fully incorporated.
- In a separate bowl, whip the cold heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture, then fold in the sprinkles and chopped Oreos.
- Spread the filling evenly over the chilled crust and smooth the top with an offset spatula. Sprinkle additional patriotic sprinkles on top.
- Cover with plastic wrap and refrigerate for at least 6 hours, preferably overnight, until completely set.
- Use the parchment overhang to lift the dessert from the pan, then slice into 16 bars with a sharp knife, wiping clean between cuts.
