No Bake Fireworks Oreo Cheesecake Bars

These No-Bake Fireworks Oreo Cheesecake Bars bring the celebration without turning on your oven. Cool, creamy, and festive for any summer gathering.


Ingredients

  • 24 Oreo cookies (regular, not Double Stuf)
  • 5 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened to room temperature
  • 1 cup powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon fresh lemon juice
  • 1 cup heavy whipping cream, cold
  • ¼ cup patriotic sprinkles (red, white, and blue), plus extra for topping
  • 8 Oreo cookies, roughly chopped

Instructions

  1. Line a 9×9-inch baking pan with parchment paper, leaving overhang on the sides for easy removal later.
  2. Process Oreo cookies (with filling) into fine crumbs, mix with melted butter, and press firmly into the bottom of the prepared pan. Refrigerate while making the filling.
  3. Beat softened cream cheese until smooth, then add powdered sugar, vanilla extract, and lemon juice, beating until fully incorporated.
  4. In a separate bowl, whip the cold heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture, then fold in the sprinkles and chopped Oreos.
  6. Spread the filling evenly over the chilled crust and smooth the top with an offset spatula. Sprinkle additional patriotic sprinkles on top.
  7. Cover with plastic wrap and refrigerate for at least 6 hours, preferably overnight, until completely set.
  8. Use the parchment overhang to lift the dessert from the pan, then slice into 16 bars with a sharp knife, wiping clean between cuts.
