  • 1 lb (450g) large shrimp, peeled and deveined
  • 8 oz (225g) mushrooms (cremini or button), sliced
  • 6 cloves garlic, minced (about 2 tablespoons)
  • 3 tablespoons olive oil, divided
  • 3 tablespoons butter
  • 1/4 cup (60ml) dry white wine (such as Pinot Grigio)
  • 1/4 cup (15g) fresh parsley, chopped
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1/2 cup (50g) grated Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons lemon juice (about half a lemon)

Instructions

  1. Step 1: Prepare the Pasta Bring a large pot of water to a rolling boil. Add 1 tablespoon of salt and the pasta. Cook according to package instructions until al dente, usually 8-10 minutes. Before draining, reserve 1/2 cup of the starchy pasta water. This will help create a silky sauce later. Drain the pasta but don’t rinse it – the starch on the surface helps the sauce cling better to your Mushroom Garlic Shrimp Pasta.
  2. Step 2: Prepare the Shrimp While the pasta cooks, pat the shrimp dry with paper towels – this ensures they’ll sear rather than steam. Season generously with salt and pepper on both sides. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering. Add the shrimp in a single layer and cook for 1-2 minutes on each side until just pink and opaque. The key here is quick cooking to keep them tender. Remove to a plate and cover loosely with foil to keep warm.
  3. Step 3: Cook the Mushrooms In the same skillet, add the remaining tablespoon of olive oil. Add the mushrooms and arrange in a single layer.   4. Step 4: Create the Sauce Reduce heat to medium and add the butter to the mushrooms. Once melted, add minced garlic and red pepper flakes, stirring constantly for 30-60 seconds until fragrant but not browned. Pour in the white wine and use a wooden spoon to scrape up any browned bits from the bottom of the pan. Let the wine reduce by half, about 2 minutes, then add the reserved pasta water. Simmer for another 2-3 minutes until slightly thickened.
  5. Step 5: Combine and Finish Return the cooked shrimp to the skillet, along with any accumulated juices. Add the drained pasta and toss everything together with tongs until well coated. Cook for 1-2 minutes until everything is hot and the pasta has absorbed some of the sauce. Remove from heat and add lemon juice, Parmesan cheese, and chopped parsley. Toss again to combine.
