These M&M’s Marshmallow Dream Bars are what happens when childhood nostalgia meets dessert perfection – crispy, gooey, colorful bliss that’s ready in minutes with no baking required!

- 6 tablespoons (85g) unsalted butter
- 16 ounces (453g) regular marshmallows (about 10 cups mini or 40 regular marshmallows)
- 6 cups (180g) crispy rice cereal
- 1½ cups (300g) M&M’s candies, plus additional ¼ cup (50g) for topping
- ¼ teaspoon kosher salt
- 1 teaspoon pure vanilla extract (optional)
Instructions
- Line a 9×13-inch baking dish with parchment paper and lightly butter it.
- Melt butter in a large pot over medium-low heat, then add a pinch of salt.
- Add marshmallows to melted butter and reduce heat to low. Stir constantly until marshmallows are mostly melted, then remove from heat and stir until smooth. Add vanilla if using.
- Quickly fold in cereal until evenly coated, then allow mixture to cool for about 1 minute.
- Gently fold in 1½ cups M&M’s, distributing them evenly throughout the mixture.
- Transfer to prepared baking dish and gently press into an even layer with buttered hands.
- Sprinkle remaining ¼ cup M&M’s over top and lightly press into surface.
- Allow to cool completely at room temperature for about 1 hour before cutting into squares.
