- 16 oz spaghetti noodles
- 1 lb ground beef (80/20 lean-to-fat ratio)
- 1 medium yellow onion, finely diced
- 3–4 cloves garlic, minced
- 24 oz marinara sauce
- 8 oz cream cheese, softened
- 1/4 cup sour cream
- 8 oz cottage cheese (small curd)
- 1/2 cup butter, divided
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 350°F (175°C). Cook spaghetti 2 minutes less than package directions, drain well, toss with a tablespoon of olive oil, and set aside.
- Brown ground beef in a large skillet over medium-high heat. Add diced onion when meat is nearly cooked, continue until onion is translucent. Add garlic and cook 30 seconds more. Season with salt, pepper, and half the Italian seasoning.
- Add marinara sauce to meat mixture, simmer 5-7 minutes, then remove from heat.
- In a medium bowl, combine cream cheese, sour cream, and cottage cheese. Season with remaining Italian seasoning, salt, and pepper.
- Melt 1/4 cup butter and pour into the bottom of a 9×13 inch baking dish, coating entire surface.
- Layer half the spaghetti in the buttered dish, spread cream cheese mixture over pasta, then add remaining spaghetti.
- Melt remaining 1/4 cup butter and drizzle over the top pasta layer.
- Pour meat sauce evenly over pasta layers, then top with mozzarella and Parmesan cheeses.
- Cover with foil (avoid touching cheese) and bake for 30 minutes, then uncover and bake 10-15 minutes more until cheese is bubbly and beginning to brown.
- Let rest 15 minutes before garnishing with parsley and serving.
