  • 3 cups cooked white rice (about 1 cup uncooked)
  • 2 pounds boneless, skinless chicken breasts, cooked and shredded
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup chicken broth
  • 1 packet (1 oz) ranch seasoning mix
  • 2 cups shredded cheddar cheese, divided
  • 1 cup cooked bacon pieces (about 8 slices)
  • 3 green onions, thinly sliced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 350°F and lightly grease a 9×13 inch baking dish.
  2. In a large bowl, beat softened cream cheese until smooth, then mix in sour cream until well combined.
  3. Stir in cream of chicken soup, chicken broth, ranch seasoning, garlic powder, onion powder, salt, and pepper until smooth.
  4. Fold in the shredded chicken, cooked rice, half the cheddar cheese, most of the bacon pieces, and two-thirds of the green onions.
  5. Transfer mixture to prepared baking dish and spread evenly.
  6. Cover with foil and bake for 25 minutes.
  7. Remove foil, sprinkle with remaining cheese and bacon, and bake uncovered for 10-15 minutes until cheese is bubbly and golden.
  8. Let rest for 5-10 minutes, sprinkle with remaining green onions, and serve.
