- 3 cups cooked white rice (about 1 cup uncooked)
- 2 pounds boneless, skinless chicken breasts, cooked and shredded
- 8 oz cream cheese, softened
- 1 cup sour cream
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup chicken broth
- 1 packet (1 oz) ranch seasoning mix
- 2 cups shredded cheddar cheese, divided
- 1 cup cooked bacon pieces (about 8 slices)
- 3 green onions, thinly sliced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
Instructions
- Preheat oven to 350°F and lightly grease a 9×13 inch baking dish.
- In a large bowl, beat softened cream cheese until smooth, then mix in sour cream until well combined.
- Stir in cream of chicken soup, chicken broth, ranch seasoning, garlic powder, onion powder, salt, and pepper until smooth.
- Fold in the shredded chicken, cooked rice, half the cheddar cheese, most of the bacon pieces, and two-thirds of the green onions.
- Transfer mixture to prepared baking dish and spread evenly.
- Cover with foil and bake for 25 minutes.
- Remove foil, sprinkle with remaining cheese and bacon, and bake uncovered for 10-15 minutes until cheese is bubbly and golden.
- Let rest for 5-10 minutes, sprinkle with remaining green onions, and serve.
